Kid Approved Beet and Blueberry Muffins

This is an incredible tasting muffin. It is moist, colorful and very tasty. Both L and C devour these muffins and so they are totally family friendly.

You can’t taste the beets and they practically melt into the muffins when you bake them. But, they are in there!

I found this recipe at All Recipes a couple of weeks ago and made them but I couldn’t get a picture since the boys ate all of them in about a day. I had enough beets left over from my CSA box beet overload that I made another batch yesterday.

The recipe makes 24 muffins. It can easily be halved. I had enough beets (3 small to medium size) to make a whole batch so I did.

You don’t have to pulp the beets like in some recipes just grate them with your cheese grater. Yes, your fingers turn pink when working with beets but the color washes out easily.

I made three substitutions to the recipe:

  • I used 1/2 white sugar 1/2 raw sugar (I find adding the raw sugar brings out all the flavors but if I substitute raw for white sugar completely it is too much)
  • I like grape seed oil so I used it instead of canola oil
  • I also used pumpkin spice (from Trader Joes) instead of only cinnamon (I love pumpkin spice!)

Remember to fold the beets and blueberries in gently at the end. It is fine if they are not totally mixed in. If you work hard at mixing the beets and blueberries in you will have pink muffins (which isn’t a bad thing, they will taste the same).

This recipe makes 24 muffins. I was able to make a mini loaf,12 regular sized muffins and two mini muffin pans (24 mini muffins). I always try to make a mini loaf pan when I make muffins or banana bread. My sweet neighbors love my extras.

Some muffin recipes don’t transfer very well to loaf pans. This muffin recipe is delicious as a bread too. It is moist enough to cook as a bread yet sturdy enough to cut through. The first time I made this recipe I made a full sized loaf, it was so moist and tasty.

As I am sure you can see there are already muffins missing. I took this picture about 10 min after the muffins made it out of the oven. By the time we went to bed we only had 1/2 of these muffins left. They are that good.

    • I thought you might be ready to make these :) You have a lot of great posts about muffins too. They are extra good right out of the oven (cooled off a bit of course) and great for breakfast too.
